◆Glycemic Index , 简称GI , 叫做升糖指数 , 用以衡量某种食物使血糖上升的能力 。 可将食物分为三个等级:低GI食物:GI<55;中GI食物:GI 55~70;高GI食物 : GI>70 。
◆Glycemic Load , 简称GL , 叫做食物血糖负荷:GL= GI×碳水化合物含量(g)/100 。 GL把该种食物提升血糖的速度和碳水化合物含量同时考量 , 因此对于肥胖和糖尿病人的饮食更具有指导意义 。 GL>20的为高GL食物;GL在10~20之间的为中GL食物;GL<10的为低GL食物 。
◆花青素:通常存在于所有深红色、紫色或蓝色的蔬菜、水果中 , 比如葡萄、蓝莓、樱桃、茄子、紫薯、紫甘蓝、草莓、桑葚等中 。
